Wednesday was my birthday and i spent the day at Pike Place Market walking around, shopping and eating. I love doing that especially during the week when it is a little less crowded. I had a fabulous lunch and got a bunch of goodies.
Then i made my Swedish Birthday cake, always reminds me of summer when i eat it.
I hope everyone is having a great June so far. My little Ella is 15 weeks now and just growing like crazy. It’s amazing to see how fast it goes.
I had a bunch of asparagus in the refrigerator and made this salad. I love this dressing and it really goes with anything but just so refreshing and another thing that reminds me of summer.
What are some of your favorite summer salads?
Asparagus Salad with Fresh Herbs
Yield: 4 servings
Prep Time: 20 minutes
Total Time: 20 minutes
Ingredients:
4 oz of asparagus cut into 3 inche pieces
8 cups of romaine lettuce
½ cup of cherry tomatoes
½ cup of sliced cucumber
3 tbsp Champagne vinegar
1 tsp Dijon mustard
2 tsp kosher salt
1/4 tsp freshly ground black pepper
10 tbsp good olive oil
1/4 cup minced scallions (white and green parts)
2 Tbsp minced fresh dill
2 Tbsp minced parsley
2 Tbsp chiffonade of fresh basil leaves
Directions:
Fill a pot of water and let it boil. Cut the asparagus and put into boiling water for 3 minutes. Once done, drain the asparagus and put it into a bowl of ice water. Let is cool while you prepare the rest of the salad.
Cut the lettuce, tomatoes and cucumber and put into a salad bowl. Set aside.
In a separate bowl. Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion.
Drain the asparagus and combine it with the rest of the salad. Then add the vinaigrette to the salad. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve immediately.
