Sauteed Kale

How often do you take time to enjoy the little things in life? I know that with everyone’s busy life it is hard.  But always remember to celebrate the small moments. If it is just a quick hand written note as a thank you or birthday card.  Bring some food over to a neighbor or bring someone flowers.   All those things are so much appreciated.

I am participating in Olivari’s Olive Oil “One year of little” campaign.  They are taking time to remind their fans and consumers that “the little things are everything.”

Today I also wanted to share with you a little recipe, but a powerful one.  When I say powerful I mean nutritionally. With all the processed food and chemicals we put in our bodies, I totally believe we need to eat the small things that matter the most to our bodies.  So this is where kale comes in place.

How many of you hate kale or used to hate kale?  I was one of them.  I think it is a green that you have to get used to.  Over time I learned to like it, and today I can eat it raw but my family likes it prepared with garlic and sauteed. I think it is just delicious this way.

Kale is a super food. It is a highly nutritious vegetable that has the strength to support our body’s detoxification system. It not only lowers the risk of contracting cancer, but is also very helpful in lowering cholesterol levels. This great vegetable is also a good source of dietary fiber and comes with the benefit of containing vitamins (A, C, K, B6), copper, calcium, manganese and potassium.

There are so many things you can do with kale, but here is a very easy simple 10 minutes recipe that I wanted to share with you today.

Print Recipe

Sauteed Kale

Yield: 4-6 servings

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

1 bunch of Kale
1 garlic clove
1 tbsp sesame oil or olive oil
1 tbsp soy sauce
1 tbsp rice vinegar

Directions:

Clean the Kale and remove from stem. Put it all in a wok or pan and then put all the other ingredients in there, pressed garlic, sesame oil/olive oil, soy sauce, rice vinegar. Stir until it has gone down in size, about 5 minutes. Enjoy as a side dish with meat or chicken.
