Chilled Cucumber Soup

This Chilled Cucumber Soup is the perfect summer dish. If you like raita or tzatziki you will love this.  Now, i am already a fan of those sides, so when i saw this recipe it was a no brainier to me.

This soup is soo simpel to make, it’s refreshing, healthy and just tasty.  Perfect little summer lunch or starter to a dinner.

My secret blog this month was I Was Born to Cook, which is written by Melissa from NJ.  I spent hours and hours on Melissa’s blog.   She write a fabulous food blog that she started after her daughter Bella was born.  Before then she was having trouble conceiving and wrote about it.  It was hard to read at times but it was a happy ending.

There were many recipes that i wanted to make from Melissa’s blog, but when i came across this Chilled Cucumber Soup i knew this was the recipe for me.  I love it.  Will be making again.

Chilled Cucumber Soup

Chilled Cucumber Soup

Yield: 6 servings

Total Time: 15 minutes

Ingredients:

2 cucumbers seeded and diced
2 scallions, cut into chunks
4 garlic cloves, chopped
3 tbsp fresh mint
3 tbsp fresh basil
1 1/2 tsp fresh dill
6 drops of hot sauce
2 cups plain Greek yogurt (Fage is my favorite)
1 cup whole milk
2 tbsp fresh lemon juice
2 tbsp fresh lime juice
2 tbsp extra virgin olive oil
Salt and Pepper to taste

Directions:

Mix all ingredients together and in a blencher and blend until smooth. Store in refrigerator or serve immediately with chopped sweet cherry tomatoes.
