Paleo Chocolate Cupcakes with Chocolate Ganache

For my daughters 6 year old birthday i wanted to make cupcakes.  Every year we have had ice cream cakes and this year she said she wanted cupcakes.  I wanted to make healthy cupcakes but still ones that were delicious.  I came across a recipe for Sexy Black Forest Cake on Paleo Hacks and adapted it for cupcakes.  They came out amazing.  Not very sweet but very chocolaty with the ganache, not sure this is considered healthy but there were low sugar at least.

The cupcakes were a huge success.  The ganache is much harder than regular frosting.  If you do make these make sure you take them out of the refrigerator plenty of time before you serve so the ganache can settle into room temperature.

Paleo Chocolate Cupcakes with Chocolate Ganache

Yield: 12 cupcakes

Prep Time: 40 minutes

Cook Time: 30 minutes

Ingredients:

  Arrowroot starch for dusting 10 eggs 2/3 cup coconut oil 1 cup maple syrup (you can use less) 1/3 cup almond milk 2 tsp vanilla 2 tbsp Apple cider vinegar 1 cup coconut flour ½ cup cacao powder 1 tsp baking soda 2 tsp baking powder ½ tsp salt Chocolate Ganache 4 oz unsweetened baking chocolate 1/3 cup coconut oil ¼ cup honey  

Directions:

Preheat the oven to 350F. Oil and dust muffin pan or use paper cupcakes. Set aside. In a large bowl combine eggs, oil, maple syrup, almond milk, vanilla and apple cider vinegar. Whisk the mixture until it's smooth and completely combined. In a small bowl combine coconut flour, cocoa powder, baking soda, baking powder, and salt.  Mix to completely combine. Add dry ingredients to wet ingredients and mix to incorporate.  The mixture will be lumpyb- let it site for 2-3 minutes, then mix again. Pour the batter into the muffin cups. Bake 25, until toothpick inserted in the center of the cup cakes come out clean. Remove from the oven and allow to cool in the pan 5-10 minutes.  Then remove the cupcakes and let it cool completely on a rack To prepare the ganache: Combine all ingredients in a bowl of a double boiler.  Or you can make your own by putting a bowl in a pot of boiling water do not let the bowl touch the hot water. Put all the ingredients in the bowl and stir until everything is melted.  Remove from the stove and let it cool until thicker consistency.  Pour over cupcakes. If you are not having the cupcakes right away i would recommend to refrigerate them, but remove them 30 minutes before serving so the ganache can soften.
