Paleo Energy Balls

We love these balls in our house for a quick snack or protein boost.  They are paleo friendly, kid friendly and diabetic friendly.  I make this batch weekly to have in the fridge.  These are also great to pop in your mouth just before a workout as well.  Especially if you work out in the morning and can’t have breakfast I just grab one of these before a run.

These balls are also very versatile you can play around with the ratios.  You can add more almond and less raisins.  If you want more sweetness you can use dates instead of some of the raisins.  You could also do peanut butter if you don’t like almonds or other nuts as well.  I also add hemp seeds for extra protein but you could other seeds if you wanted too.  Very versatile.

Paleo Energy Balls

Yield: 20 balls

Prep Time: 10 minutes

Ingredients:

1 cups raisins
2 cups coconut flakes
1 tbsp raw cocoa
1 tbsp cinnamon
1 cup almond butter (you can also do 1 cup raw almonds and tbsp of olive oil)
½ cup hemp seed (optional)
1/2 cup of unsweetened shredded coconut (to roll in)

 

Directions:

These balls are made in a food processor.  If you are using raw almonds then process the almonds with olive oil first to make almond butter.  Remove the almond butter from food processor.

Add all the ingredients (except shredded coconut) first and mix and then last add the almond butter.  Mix well.

Once done take about 1 tbsp of dough and roll into a ball and roll in the shredded coconut.  Put into a glass container to store in the fridge. These can last up to two weeks.
