Watermelon and Feta Salad

This watermelon and feta salad is one of my new favorites.  I had it a few weeks ago at a neighbors house and i could not stop eating it.  The best part is that it is so easy to make.  The hardest part to this salad is cutting up the watermelon.  It’s simple, delicious and perfect for a summer night.

I have previously made a watermelon and tomato salad as well which is fabulous.  And also if you have leftover watermelon i highly recommend this watermelon and cucumber mojito.

Watermelon and Feta Salad

Yield: Serves 8

Prep Time: 15 minutes

Ingredients:

1 whole mini watermelon (6 cups of watermelon) cut in cubes
1 cup of Feta Cheese crumbled
1/2 cup of fresh mint (chopped)
salt
pepper

Directions:

Cut up the watermelon into cubes, crumble the feta and add the mint, salt and pepper all into a bowl.  Mix and serve with dinner.  You can make this ahead of time by a few hours and let it sit in the refrigerator.
