Creamed Spinach

Two weeks to Thanksgiving.  I know time is just going way too fast.  Do you have your menu set up?  I am exploring new side dishes.  First time i had Creamed Spinach was when i was in college in Boston and went to Boston Market.  Mmmm it was so good.  Especially after a few late nights.  That creamy stuff was just delicious.  I am not sure i have had it since.  So i was trying a few recipes and i like the version with cream cheese and bacon in it.  I am not saying this is healthy but it is very good.

Also i think this would be an excellent dip, just bake in the oven before quests arrive and serve with crackers. And if you want to go a step further add some artichoke to it. I am sure it will just be delicious.

Creamed Spinach

Yield: 8 servings

Prep Time: 10 minutes

Cook Time: 20 minutes


1 stick butter

4 tbsp flour

1/2 whole medium onion, finely diced

3 cloves garlic, finely minced

2 cups (Milk) Silk Unsweetened

4 oz cream cheese

Salt and pepper, to taste

1 pinch ground nutmeg

3 tbsp butter

24 ounces, weight baby spinach

½ lbs of bacon chopped (optional)

¼ grated Parmesan cheese (optional)


Melt 1 stick of butter in a pot. Sprinkle in flour and salt and whisk together. Cook over medium heat for five minutes or until light golden brown. Slowly stir in milk, whisking constantly, then stir in cream cheese and cook for another five minutes while you cook the spinach.

In a separate pan melt 3 tbsp butter, and then add garlic and onion until transparent. Add spinach in increments until all incorporated, and cook until wilted but not soggy, about 4 to 5 minutes.

While Spinach is cooking cook the bacon in a pan until crispy.

Then season the cream sauce with salt, pepper, and nutmeg. Add spinach to the cream sauce, stirring gently to combine.

Add bacon and Parmesan cheese (optional) and serve immediately.

Note: I added the mixture into a food processor just to chop up the spinach a little.
