Happy March everyone! Time is just flying away but spring is almost here. I can see all the spring flowers coming up. I am not a winter fan at all.
As all of you know i am a mom but I also work full time. What that means to me is that i cook most of my meals on Sundays for the week, i also prepare lunches and breakfasts for everyone the night before, this is so my mornings, are as smooth as possible and i can sleep as long as possible too. All i have to worry about in the morning is to shower and get dressed, then we can sit at the breakfast table and eat. Once we are done, just pick up the little bags in the refrigerator and out we go. Bags are all packed the night before. When I come home at night it is just to turn on the oven, or the stove and heat up one of the dishes what was prepared on Sunday, make a salad and sit down and eat. Dinner is prepared in less than 30 minutes and i get the extra time to go out with my daughter and also walk the dog.
So when i came across this overnight oatmeal i knew it was something for me to try. I have tried other oatmeals that soak overnight but this one was delicious. If you are on the run, you can just grab the container and go.
I also totally believe in fat, and eat nothing low fat (did you know all low-fat items contain more sugar?), just limit the sugar and the carbohydrates. So when i made this oatmeal i used whole milk and plain yogurt. My favorite plain yogurt is Siggi’s. The Siggi’s brand is the closest to the yogurt that i grew up with. No sweetness at all, instead on the sour side. Just delicious if you haven’t tried it.
Also for the sweetness i would use honey, i do not believe Aguva is good for you, it’s actually as bad as HFCS.
This recipe is part of the monthly Secret Recipe Club “assignment!” Every month you get a name of a blog and you need to choose ANY recipe from that blog and then blog about that recipe by a date. It’s a secret because the blog owner does not know you are doing this until the reveal date. My secret blog this month was Barbara Bakes, which is written by Barbara. I have actually know Barbara in the blog land ever since i started. So when i got her blog i was very excited. There is a long list of things i want to make from her blog, i just knew i wanted to try this recipe first. But i am also going to make her pumpkin monkey bread and the Lemon Bar Cookies. So if you have never been to Barbara’s site go and visit. It’s just awesome and gorgeous.
Overnight Refrigerator Oatmeal with Berries
Yield: 1 serving
Prep Time: 5 minutes
Ingredients:
1/4 cup oats (not instant)
1/3 cup whole milk
1/4 cup plain yogurt
2 tsp honey (optional)
1/4 cup chopped raspberries
1/4 cup chopped strawberries
additional berries for topping
Directions:
Combine all ingredients, stir, cover and refrigerate overnight. Top with additional berries if desired.

March 4, 2013 at 8:24 pmGreat pick! I’ve been making big batches of cooked steel-cut oats for my workday breakfasts, but I wasn’t keen on the idea of cooking up a big pot of oatmeal once the warmer weather rolls around… this sounds like a perfect solution, especially once berry season rolls around!
PS – I am so with you on the full-fat yogurt. I’d rather have a small bowl of good-quality full-fat yogurt than a big bowl of the low-fat kind. There’s just no comparison.
