How often do you take time to enjoy the little things in life? I know that with everyone’s busy life it is hard.  But always remember to celebrate the small moments. If it is just a quick hand written note as a thank you or birthday card.  Bring some food over to a neighbor or bring someone flowers.   All those things are so much appreciated.

I am participating in Olivari’s Olive Oil “One year of little” campaign.  They are taking time to remind their fans and consumers that “the little things are everything.”

Today I also wanted to share with you a little recipe, but a powerful one.  When I say powerful I mean nutritionally. With all the processed food and chemicals we put in our bodies, I totally believe we need to eat the small things that matter the most to our bodies.  So this is where kale comes in place.

I love strawberry daiquiri’s made with fresh sweet strawberries.  Reminds me sitting on a beach listening to the waves.  Strawberry daiquiri’s are so easy to make and I wanted to share this simple and delicious recipe with you. This recipes is the classic citrus-flavored cocktail.  Ripe strawberries are sweet enough, so there isn’t any added sugar here.  However, if yours aren’t quite ripe you can still indulge in a daiquiri. Just add a little simple syrup to amp up the sweetness.

If you are having a BBQ this summer, just make a big jug of this and I bet you it will be gone in minutes.

I am a huge fan of a good Sangria. It can’t be too sweet, or to sour or too much of anything. It just has to have a right balance.

The classic Sangria is most commonly made with red wine. Sangria translates to “bloody” which describes the rich color of the alcoholic fruit punch. However, there is no one recipe for authentic Sangria. If you google Sangria you will get hundrets of recipes and one is different from the other. You can make it as strong or sweet as you like.

Baked Eggplant Parmesan

Before i start writing this, i have to say that taking picture of this dish and making it look appetizing was very hard. This dish was so much better than it looks. I tried plating it, and all different things, at the end i just went rustic. The point is it is delicious.

I love a good chicken Parmesan but I got some eggplant in my CSA box this week and needed to do something with it.  I like eggplant but I don’t love it. There are certain preparations of eggplant that I just do not like.  But this was delicious and very easy to make too.  This is one of those dishes you can make a big batch of and eat leftovers for 2-3 days.  Would go great with some whole wheat pasta.

Happy Cinco de Mayo!  I really didn’t do anything to celebrate except relax. This weekend we hit 80F in Seattle, it was just gorgeous!

As usual Sunday was my cooking day, and I made this delicious Italian Black Bean Soup.  I know I am crazy but I still love my soups during hot days, and the spicier the better.

I can’t believe it is April time is just flying away, people always tell you when you become a mother time goes by so must fast.  It is true.  My to do list never shrinks, it just gets longer and longer.  What i learned is you just become better at prioritizing and doing things differently.  I think i have have told folks here before that i only do grocery shopping once a week, i only cook on Sundays for the week, and i make breakfasts and lunches the night before.  This is the only way i can now function and feel i get things done and not stress.

Recently i got a mandoline and i have no idea how i lived without this thing.  I love it.  One of the first things i did was to make these potato chips.  Again so easy and delicious.  You don’t have to use a mandoline you can use a cheese slicer or even a food processor.  It’s just a mandoline gets you the very thin slices.

Iced Irish Coffee

Even if i am not a big coffee drinker i love Irish Coffee, and it’s also great drinking cold, just harder to mix the sugar in.  You can always use honey as a substitute.

When it comes to Irish coffee there are some pretty strict rules out there on how to make it and how it is presented. I am sure that an Iced Irish Coffee is against the rules.  But also some folks say that the cream should not be whipped either, but really it is up to you how you want to drink it.

Overnight Refrigerator Oatmeal with Berries

Happy March everyone!  Time is just flying away but spring is almost here.  I can see all the spring flowers coming up.  I am not a winter fan at all.

As all of you know i am a mom but I also work full time.  What that means to me is that i cook most of my meals on Sundays for the week, i also prepare lunches and breakfasts for everyone the night before, this is so my mornings, are as smooth as possible and i can sleep as long as possible too.   All i have to worry about in the morning is to shower and get dressed, then we can sit at the breakfast table and eat.  Once we are done, just pick up the little bags in the refrigerator and out we go.  Bags are all packed the night before.  When I come home at night it is just to turn on the oven, or the stove and heat up one of the dishes what was prepared on Sunday, make a salad and sit down and eat.  Dinner is prepared in less than 30 minutes and i get the extra time to go out with my daughter and also walk the dog.
