White Russian Cocktail

Happy Valentines Day!  I am not a big Valentine’s person, i believe we should celebrate love everyday.  However, on Valentine’s day i like to give a few cards out, and share a cocktail or two with the loved ones.  White Russian’s are some of my favorite dessert drinks!  Have you tried to flavor it with International Delight?  Sooo good!

Samoas Cookie Bars

Imagine a bar that is chewy with layers of shortbread, chocolate, coconut, and caramel – well this is the bar.  It is delicious and rich too.  I was looking for a recipe to include my favorite girl scout cookie which is Samoas and i wanted to replicate the Samoas into the bar, and this is the bar that i created.

Best Recipes in 2012

Where has the time gone, it’s already February. . .i guess that is what happens when you have  a little one.  Soon to be one!

This is the third year of Delishhh and I have had a blast!  It has been so much fun writing and creating this blog and there is more to come.  But first thank you everyone for being very supportive and giving feedback and comments.  You guys make it fun!  Next year will be a very exciting year for me and very excited to share it with you.

Chocolate Kahlua Mousse

Love mousse, but real mouse is made with raw eggs but many will not eat it because for raw egg.  Today there are many other ways of making mousse without raw eggs and this is a very simple and easy way of first making custard and then mixing it and refrigerating it.  This Chocolate Kahlua Mousse is so simple and delicious.  The only issue is that you have to pretty much make this the night before.

No-Bake Chocolate Bottom Pumpkin Tart

A few weeks ago i wanted to make new pumpkin dessert that was not pumpkin pie.  I came across this No-Bake Chocolate Bottom Pumpkin Pie and i knew i had to make it.  It is very simple, and it comes out of the Unofficial Harry Potter Cookbook.  I never thought i would make a Harry Potter recipes but this tart was awesome.  And the crust was amazing, i have since used the crust for many other tarts.  It is now my favorite tart crust.

Italian Wedding Soup with Turkey Meatballs

There are endless variations on Italian Wedding Soups, but the main elements are meatballs and greens.  The name indicates that the soup might be served at an Italian wedding, it is actually a mistranslation of minestra maritata, which refers to the “marriage” of greens and meat in the soup. I actually didn’t know that until i looked it up.  I have always loved this soup.  I  also make it with pork/beef meatballs, you can just substitute this recipe for 1/2 pork and 1/2 beef.  Sometime i use white beans instead of pasta as well.  Either way it is delicious.

Squash Salad with Oranges and Olives

10 days until Thanksgiving.  Are you ready? 19 days until Dec 1st. . that is scary!

This year we are hosting Thanksgiving at our house with a small little group. It should be lots of fun. I usually do Turkey and ribs for Thanksgiving  but i have decided to skip the ribs this year. With an 8 months old in the house, something has to go.

I have been experimenting with some new side dishes, still not decided which ones i will serve but this Squash Salad with Oranges and Olives is delicious.  Very refreshing and also filling. Could be a great little side dish to your Thanksgiving table.

Creamed Spinach

Two weeks to Thanksgiving.  I know time is just going way too fast.  Do you have your menu set up?  I am exploring new side dishes.  First time i had Creamed Spinach was when i was in college in Boston and went to Boston Market.  Mmmm it was so good.  Especially after a few late nights.  That creamy stuff was just delicious.  I am not sure i have had it since.  So i was trying a few recipes and i like the version with cream cheese and bacon in it.  I am not saying this is healthy but it is very good.

Also i think this would be an excellent dip, just bake in the oven before quests arrive and serve with crackers. And if you want to go a step further add some artichoke to it. I am sure it will just be delicious.
